This is a light and summery dish that has a great flavor and utilizes garden fresh produce. It’s also super quick to put together and the lemon dressing mixes deliciously with the quinoa and other flavors.

2 Tbsp diced white onion
2 tbsp lemon juice

I was trying to think of inexpensive ways to make my dog’s tummy happy. Dog treats have gotten so pricey and the ingredients are well, down right nasty at times. So I experimented on my own and made a tasty little treat that Fido would enjoy.
I used leftover chicken broth. We have a slow cooker and cook a chicken in it for one of our dinners. Well, when you take the chicken out what’s left in the pot is chicken bits and watery broth stuff. Yummy. Not for you but for your pup it sure is. You could probably… Read the rest

This is a quick and easy recipe that I just LOVE. Instead of that deep fried version this one is a slightly healthier way to eat beer battered fish. It’s pan fried in a small amount of coconut oil, which adds a delicious flavor profile. Plus, most of the ingredients you probably already have in your pantry and fridge. It’s a great way to cook freshly caught fish (the first time I tried it was when my dad caught some walleye). Easy already, right?
2 Pounds cod fillets or your preferred fish
2 -4 Tbsp organic extra… Read the rest

I love my dog. She’s my best friend with four feet. Honestly. And I love to spoil her with treats. But they are a little costly and I don’t really want to give her treats with a million different ingredients in them either. Lets take Del Monte’s Pup Peroni ingredients, shall we:
Beef, Meat by-Products, Soy Grits, Sugar, Liver, Salt, Propylene Glycol, Garlic Powder, Caramel Color, Natural Smoke Flavor, Potassium Sorbate (used as a preservative), Sodium Nitrite (for color retention), Red 40, BHA (used as a preservative), Onion Extract. Hummus is one of the easiest snacks, appetizers, dips, or spreads to make. Just throw all your ingredients in a food processor and blend. I love hummus and I make it using both canned garbanzos and dried garbanzo beans. However, if I have the forethought I always use dried because the hummus turns out smoother, fluffier and tastes better. It’s really not much more work than using a can, it just takes a little more preparation and advanced planning since you have to soak the beans overnight and boil them. Plus there isn’t any added sodium or preservatives when you… Read the rest

I know I said I’m on a mission to find the best Peanut Butter Cookie recipe BUT, so what if I make a couple pit stops with other types of cookies along the way. Maybe I just need to cleanse my palate, if you will. On to yummy Oatmeal Cookies!!
I tried to make them somewhat healthy. Okay, perhaps “healthy” is a bit of a stretch for cookies, but I tried. Here goes nothin’…
2 1/2 Cups of organic quick or old fashioned oats, uncooked.
3/4 cup of organic wheat bran
1 cup organic raw sugar — As… Read the rest

The most time consuming part of this recipe is slicing the chicken, but it goes pretty quick if you use a sharp knife. This is one of my favorite things to make in the summer because it is light, relatively easy, and surprisingly flavorful. I would have to say it does not smell the best while cooking, but don’t let that deter you.
1 Tbsp coconut oil
1/2 large white onion roughly chopped
1 red, yellow, or orange pepper cut in chunks
2 Tbsp raw sugar
4 Tbsp high quality fish… Read the rest

Peanuts have a bad rap for being high in fat. This may be true BUT peanuts are also high in protein, Vitamin E and niacin. And honestly, PB is delicious. The organic, free of added sugar and salt kind, that is. Look on the back of PB jar labels and you’ll see. Don’t you just want good ol’ fashioned peanut butter to be just that; Peanut Butter? Sorry, I’m getting off track, we’re here to talk about Peanut Butter Cookies, not me preaching debating on the more healthier form of PB.
I’m on a quest. I want to… Read the rest
